Thick fresh stalks with a clean lemon-ginger fragrance in the tender white core, plus fibrous green tops that make an excellent broth.
Use the bottom four inches, where the stalk is pale and swollen; smash it with the back of a knife and mince finely, or bruise it and drop it in whole. The green upper leaves are too tough to eat but are the best part for tea and simmering stock. Cut and delivered fresh, so the stalks are still juicy rather than dry and papery. Cut fresh and sold through local Alabama delivery, farm pickup, and our farmers-market stand.

Why we only ship Mondays and Tuesdays
A plant in a dark box is on a clock. Shipping early in the week means it reaches you before the weekend instead of sitting in a warehouse from Friday to Monday. It costs us a day or two of lead time and saves a lot of plants.
Practically: an order placed Wednesday, Thursday, Friday or over the weekend goes out the following Monday. We'd rather tell you that now than let you find it in a tracking number.
How long it takes once it leaves
