• Washing: Only right before serving, and expect the rinse water to run pink. Dry thoroughly or the colour will run into whatever you put it on.
• Using: Use it where the colour is part of the point - over a pale soup, on goat cheese, across a white plate. The flavour is mild enough that it never fights what it is sitting on.

Will the red colour bleed into my food?
Yes, into anything wet or acidic. Betalain pigments are water-soluble, so a dressing or a damp surface will pick up pink within minutes. Add it at the last moment if you want the stems to stay sharply red.

What does it taste like?
Earthy and sweet, recognisably beet but far gentler than the root. There is none of the mineral heaviness that puts people off mature beets.

Are the stems edible?
The stems are the best part - that deep ruby colour is almost entirely in the stem, and they are crisp and sweet. Nothing needs trimming.
