Care Instructions
  • Storage: On the stalk if you have it, otherwise loose and unwashed in the crisper
  • Shelf life: 1 to 2 weeks loose; 3 weeks or more still attached to the stalk
  • Washing: Rinse and trim the stem end just before cooking. Pull off any loose outer leaves and leave the rest.
  • Using: Halved and roasted cut-side down until properly caramelised, or shredded raw into a slaw. Both work; boiling does not.

Questions & Answers

Why do they taste bitter and sulfurous sometimes?
Overcooking. Sprouts contain glucosinolates that break down into sulfur compounds the longer they are heated, which is where the boiled-sprout reputation came from. Roast or sear them fast and they go sweet and nutty instead.

Do they keep better on the stalk?
Considerably - the stalk keeps feeding them and slows moisture loss, so a whole stalk holds for weeks where loose sprouts fade in one. It also takes up the whole fridge, which is the trade-off.

Does frost improve them?
Yes. Cold weather converts starch to sugar as a natural antifreeze, so sprouts cut after a frost are measurably sweeter. That is why they are a winter vegetable and not a summer one.

Why we only ship Mondays and Tuesdays

A plant in a dark box is on a clock. Shipping early in the week means it reaches you before the weekend instead of sitting in a warehouse from Friday to Monday. It costs us a day or two of lead time and saves a lot of plants.

Practically: an order placed Wednesday, Thursday, Friday or over the weekend goes out the following Monday. We'd rather tell you that now than let you find it in a tracking number.

How long it takes once it leaves
