Plant cloves in fall and dig full, storable heads the following late spring, plus green garlic to pull any time you want it.
Garlic is supplied as certified seed cloves for planting, not as a leafy seedling, and the Deep South does best with softneck types that need little winter chill. Break the head into cloves at planting time only, set each one pointed end up about two inches deep, and mulch with straw for winter. Stop watering once the lower leaves brown in May, then lift the heads when about a third of the leaves have yellowed and cure them in a shaded, airy spot. A plant in a dark box is on a clock. Shipping early in the week means it reaches you before the weekend instead of sitting in a warehouse from Friday to Monday. It costs us a day or two of lead time and saves a lot of plants.
